Instructions
  1. 1. Preheat the oven to 375°F and grease a 9x13-inch baking dish with a little butter or oil.
  2. 2. Bring a medium pot of salted water to a boil, add the diced potatoes, and cook for 6 to 7 minutes until just barely tender; drain well.
  3. 3. Set a large skillet over medium heat, add the sausage, and cook until browned, breaking it into crumbles as it cooks.
  4. 4. Add the butter, onion, and red bell pepper to the skillet and cook for 4 to 5 minutes until softened. Stir in the Breakfast Infused Olive Oil Blend and the drained potatoes, then cook for 2 minutes so everything picks up the flavor.
  5. 5. Spread the sausage and potato mixture evenly in the prepared baking dish.
  6. 6. In a large bowl, whisk the eggs, milk, salt, pepper, and garlic powder until smooth, then pour the mixture over the casserole.

Notes
