Ingredients
  

  • 1 pound Large sea scallops side muscle removed, patted dry
  • 1 tablespoon All Purpose Herb Infused Olive Oil for searing
  • 3 tablespoons Unsalted butter
  • 2 tablespoons All Purpose Herb Infused Olive Oil
  • 2 cloves Garlic minced
  • 1 tablespoon Fresh parsley finely chopped
  • 1 teaspoon Lemon zest
  • 1 tablespoon Fresh lemon juice
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black pepper freshly ground

Equipment

  • Large skillet
  • Tongs
  • Paper towels
  • Microplane or zester

Method
 

Prepare the Scallops
  1. Pat scallops dry and season lightly with salt and pepper.
Sear the Scallops
  1. Heat olive oil in a skillet over medium-high heat and sear scallops 2–3 minutes per side until golden.
Make the Butter Sauce
  1. Reduce heat, add butter, infused olive oil, garlic, lemon zest, and lemon juice.
Finish and Serve
  1. Return scallops to pan, spoon sauce over, garnish with parsley, and serve immediately.
