  • 1 lemon cut into wedges
  • 1 tablespoon chopped fresh parsley for serving

  1. 1. Preheat the oven to 400°F and lightly oil a baking dish or rimmed sheet pan.
  2. 2. Pat the chicken breasts dry, then season both sides with kosher salt, black pepper, garlic powder, and Italian seasoning.
  3. 3. Heat the Smoked Garlic Infused Olive Oil in a large skillet over medium-high heat. Sear the chicken for 2 minutes per side until lightly golden.
  4. 4. Transfer the chicken to the prepared baking dish.
  5. 5. In a small bowl, mix the panko breadcrumbs, Parmesan, chopped parsley, and melted butter until the crumbs are evenly coated.
  6. 6. Spoon the breadcrumb mixture over the top of each chicken breast and press it on gently.
  7. 7. Bake for 16 to 20 minutes, or until the chicken reaches 165°F in the thickest part and the topping is crisp and golden.
  8. 8. Rest the chicken for 5 minutes, then finish with more parsley and lemon wedges before serving.

Notes

The short sear builds flavor and helps the topping stay nicely set in the oven. If you prefer a saucier finish, spoon any pan drippings over the chicken before serving. For a stronger smoked garlic profile, brush a little extra oil over the chicken right before the breadcrumb topping goes on.
