  • 1 pound Italian sausage casings removed
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 tablespoon tomato paste
  • 1 14.5-ounce can diced tomatoes, with juices
  • 2 15-ounce cans cannellini beans, drained and rinsed
  • 1/2 cup chicken broth
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice

Instructions
  1. Heat the Herbs De Provence Infused Olive Oil Blend in a large skillet over medium heat. Add the sausage and cook, breaking it into pieces, until browned and cooked through.
  2. Add the onion and bell pepper and cook until softened, then stir in the garlic and tomato paste and cook for 1 minute until fragrant.
  3. Pour in the diced tomatoes and chicken broth, scraping up any browned bits from the bottom of the pan.
  4. Stir in the cannellini beans, salt, black pepper, and crushed red pepper flakes, then simmer for 8 to 10 minutes until the sauce thickens slightly.
  5. Finish with parsley and lemon juice, then taste and adjust seasoning if needed.
  6. Serve hot straight from the skillet with bread, rice, or a simple salad.

Notes

For the best texture, let the sausage develop a deep brown color before adding the vegetables. The beans should stay creamy, and the final skillet should be saucy but not watery. If you prefer a thicker finish, simmer uncovered for a few extra minutes before serving.
