  • 1 teaspoon granulated sugar
  • 3/4 cup warm water 110°F
  • 2 cups all-purpose flour
  • 1 teaspoon fine salt
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons Garden Infuzions Middle Eastern Infused Olive Oil Blend plus more for brushing
  • 1/2 cup za'atar seasoning
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons sesame seeds
  • 1 medium tomato thinly sliced
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley

  1. 1. In a large bowl, combine the yeast, sugar, and warm water. Let stand for 5 to 10 minutes until foamy.
  2. 2. Stir in the flour, salt, yogurt, and 2 tablespoons of the Garden Infuzions Middle Eastern Infused Olive Oil Blend. Mix until a shaggy dough forms.
  3. 3. Knead on a lightly floured surface for 6 to 8 minutes until smooth and elastic, then place in a lightly oiled bowl, cover, and let rise until doubled, about 1 hour.
  4. 4. Preheat the oven to 475°F and line two sheet pans with parchment paper.
  5. 5. Punch down the dough and divide it into 4 equal pieces. Roll each piece into a thin oval or round about 1/4-inch thick and place on the prepared pans.
  6. 6. In a small bowl, stir together the za'atar seasoning and extra-virgin olive oil until it forms a spreadable paste.
  7. 7. Spread the za'atar mixture over each round, leaving a small border around the edge. Add tomato slices, sesame seeds, or feta if using.
  8. 8. Bake for 10 to 12 minutes, until the crust is golden at the edges and the topping is fragrant.
  9. 9. Brush the warm bread lightly with a little more Garden Infuzions Middle Eastern Infused Olive Oil Blend, sprinkle with parsley, and serve warm.

Notes

Manakish is best served warm from the oven, when the crust is tender and the topping smells especially fragrant. If the dough springs back while rolling, let it rest for 5 to 10 minutes and try again. The recipe works well as a shared bread for mezze nights, brunch tables, or a simple dinner side.
